Market Minestrone Soup

This hearty and warming soup is super easy to make and features market vegetables readily available in the cold Winter months.

Ingredients (Serves 4)

1 tsp vegetable oil

1 medium onion, finely diced

1 stick~ of celery, finely diced

1 carrot, peeled and grated

1 tsp oregano, dried

400 g tin chopped tomatoes

1 courgette, finely diced

1 tbs tomato purée

1000 ml vegetable stock, made to pack recommendation

400 g tin cannellini beans

100 g winter greens, finely sliced

200 g macaroni, cooked

Method

Heat the oil in a large saucepan, add the onion, celery and carrot and cook over a medium heat for 10 minutes

Add the oregano, chopped tomatoes, courgette, tomato puree and vegetable stock and simmer for 30 minutes.

Add the pasta, beans and greens and cook for another 5 minutes.

Serve with warm crusty bread from the market.
