
1 tsp vegetable oil
1 medium onion, finely diced
1 stick~ of celery, finely diced
1 carrot, peeled and grated
1 tsp oregano, dried
400 g tin chopped tomatoes
1 courgette, finely diced
1 tbs tomato purée
1000 ml vegetable stock, made to pack recommendation
400 g tin cannellini beans
100 g winter greens, finely sliced
200 g macaroni, cooked
Add the oregano, chopped tomatoes, courgette, tomato puree and vegetable stock and simmer for 30 minutes.
Add the pasta, beans and greens and cook for another 5 minutes.
Serve with warm crusty bread from the market.
